As the last signs of summer fade, I thought I´d share the recipe for one of my most popular salads. The summer has been long and hot; the calendar filled with al fresco events, feeding mums and pregnant women in Barcelona. The BCN Hungry MAMAS have eaten a large part of my repertoire of dishes, but this has been a clear favourite. I´ve made it many times and although it has been served cold on a picnic table, there´s no reason it couldn´t be warmed up. This salad is mainly about the freshness of ingredients….and the dressing. Oh, that dressing!

Ingredients:
2 courgettes, spiralized
2 carrots, spiralized
1 red onion, thinly sliced
Vermicelli rice noodles, 2 nests
Coriander, small bunch
Peanuts, 60g roasted
Nigella seeds, 2 tsp
Dressing ingredients:
1/2 an orange, juiced & zested
1 tbsp miso paste
2 tbsp honey
3 tbsp olive oil
2 tbsp rice wine vinegar
2 tbsp soy sauce
1 tbsp sesame oil
1 clove garlic, crushed
Method:
Place the rice noodles into a bowl and cover with boiling water. After 5 minutes, drain and chop with scissors into bite sized pieces.
The most fun part of this recipe is spiralizing the courgettes and carrots. It´s really satisfying!

Put them in a bowl and add the onion, coriander and the peanuts. Mix in the noodles once they have cooled and sprinkle the nigella seeds on top.
Combine the dressing ingredients in a small jar and shake thoroughly to mix.
Dress the salad and serve (lime wedges add an extra bit of zing)!
